1 pound Brussels sprouts, trimmed and halved

1 pound carrots, peeled and sliced into ½-inch rounds

3 tablespoons olive oil

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

3 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the halved Brussels sprouts and sliced carrots.

      Make the Glaze: In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey or maple syrup, minced garlic, thyme, salt, and pepper until well combined.

        Toss and Coat: Pour the balsamic glaze over the vegetables in the mixing bowl. Toss everything together until the Brussels sprouts and carrots are fully coated in the glaze.
