There’s something incredibly comforting about a freshly baked dessert, especially when it comes in the form of blondies. These delightful treats, often considered a sweeter counterpart to brownies, bring a rich, buttery flavor to the table without the presence of chocolate. While classic blondies typically include vanilla and brown sugar, the Banana Bliss Blondies take this beloved dessert to a whole new level by incorporating ripe bananas. This not only adds a natural sweetness but also infuses the blondies with moisture, creating a texture that is both chewy and soft.

Ingredients

2 ripe bananas, mashed

1/2 cup (115g) unsalted butter, melted

1 cup (200g) brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup (125g) all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (90g) white chocolate chips

1/2 cup (90g) walnuts or pecans, chopped (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal of the blondies later.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted butter. Stir until well blended. Then add the brown sugar and mix until smooth.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until everything is thoroughly combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture using a rubber spatula or wooden spoon just until combined. Be careful not to overmix to keep the blondies tender.

Incorporate Mix-Ins: Gently fold in the white chocolate chips and chopped nuts (if using) until evenly distributed throughout the batter.

Transfer to Baking Pan: Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes or until the blondies are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool and Slice: Allow the blondies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Transfer to a wire rack to cool completely. Once cool, slice into squares or rectangles.

Serve and Enjoy: Enjoy your delicious Banana Bread Blondies warm or at room temperature, pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream!
