1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

3 tablespoons granulated sugar

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup sour cream

2 ripe bananas, mashed

1 teaspoon lemon juice

1 cup whipped cream (for topping)

2 bananas, sliced (for topping)

Nilla Wafers (for garnish)

Instructions
 

Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and 3 tablespoons of sugar. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Set aside.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add 1 cup sugar, mixing until well combined.

      Add Eggs and Flavor: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract, sour cream, mashed bananas, and lemon juice until just combined. Avoid over-mixing to prevent a dense texture.

        Bake the Cheesecake: Pour the cheesecake filling into the prepared crust, smoothing the top with a spatula. Bake in the preheated oven for about 55-65 minutes or until the edges are set and the center has a slight jiggle. Don’t overbake!

          Cool & Chill: Turn off the oven and crack the oven door open. Allow the cheesecake to cool in the oven for 1 hour to prevent cracking. Remove the cheesecake from the oven and let it cool at room temperature for an additional hour. Cover and refrigerate for at least 4 hours or preferably overnight to set completely.
