1 French baguette (or similar crusty bread)

2 ripe peaches, peeled, pitted, and diced

1 cup fresh basil leaves, chopped

1/4 cup red onion, finely diced

1 tablespoon balsamic vinegar

1 tablespoon honey

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Optional: Crumbled feta or goat cheese for topping

Prep the Bread: Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet. Brush both sides lightly with olive oil.
