Basil Pesto Chicken Caprese Sandwich

Ingredients
  

2 boneless, skinless chicken breasts

1/4 cup basil pesto (store-bought or homemade)

4 slices fresh mozzarella cheese

1 large tomato, sliced

2 cups fresh basil leaves

4 ciabatta rolls or crusty bread of choice

2 tablespoons olive oil

Salt and pepper to taste

Balsamic glaze, for drizzling (optional)

Prepare the Chicken: Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and a tablespoon of olive oil. Grill for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes.

    Slice the Chicken: Once the chicken has rested, slice it into thin, even pieces.

      Assemble the Sandwich: Slice the ciabatta rolls in half. Spread a generous layer of basil pesto on both the top and bottom halves of the rolls.

        Layer the Ingredients: On the bottom half, layer the grilled chicken slices, followed by the fresh mozzarella slices, tomato slices, and a handful of fresh basil leaves.

          Top and Toast: Close the sandwich with the top half of the roll. In a clean skillet, heat a tablespoon of olive oil over medium heat. Place the sandwich in the skillet and press down gently using a spatula. Toast for about 3-4 minutes, or until golden brown, then carefully flip and repeat on the other side until the cheese is melted and slightly gooey.

            Drizzle & Serve: If desired, drizzle with balsamic glaze before serving. Cut the sandwich in half and enjoy!
