1 lb boneless, skinless chicken thighs

1 cup barbecue sauce (your favorite brand)

4 pieces of flatbread or naan

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup sweet bell peppers, diced (use a mix of colors for visual appeal)

1/4 cup fresh cilantro, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Olive oil for brushing

Optional: pickled jalapeños for spice

Marinate the Chicken: In a bowl, combine the chicken thighs with 1/2 cup of barbecue sauce, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to absorb the flavors.

    Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade (discard remaining marinade) and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let it rest for a few minutes before slicing it into bite-sized pieces.

      Prepare the Flatbreads: Preheat your oven to 400°F (200°C). Place the flatbread on a baking sheet. Brush the top of each flatbread lightly with olive oil to ensure golden crispiness.

        Assemble the Flatbreads: Spread a generous amount of barbecue sauce (about 2 tablespoons) over each flatbread. Evenly distribute the sliced grilled chicken, followed by the shredded mozzarella cheese, red onions, and diced bell peppers on top.

          Bake: Place the assembled flatbreads in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and golden.

            Garnish and Serve: Remove the flatbreads from the oven and sprinkle fresh cilantro and optional pickled jalapeños on top for an extra kick. Slice into portions and serve hot.
