BBQ Chicken Zucchini Boats

4 medium zucchinis

2 cups cooked shredded chicken

1 cup BBQ sauce (your favorite kind)

1 cup corn kernels (canned or fresh)

1 cup shredded cheddar cheese

1/2 cup diced red onion

1/4 cup chopped fresh cilantro (optional)

Salt and pepper to taste

Olive oil for drizzling

1 teaspoon garlic powder

1 teaspoon smoked paprika (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the insides with a spoon, leaving about 1/4 inch of the flesh to create a boat. Reserve the scooped-out zucchini flesh for later.

      Mix the Filling: In a large mixing bowl, combine shredded chicken, BBQ sauce, corn, half of the cheddar cheese, diced red onion, the reserved zucchini flesh (chopped), salt, pepper, garlic powder, and smoked paprika. Mix well until all ingredients are evenly coated.

        Stuff the Zucchini Boats: Place the zucchini halves on a baking sheet lined with parchment paper. Drizzle a little olive oil over each zucchini boat. Fill each boat generously with the BBQ chicken mixture.

          Bake the Zucchini Boats: Cover the baking sheet with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil, sprinkle the remaining cheese on top of each boat, and bake for an additional 10-15 minutes until the cheese is bubbly and golden, and the zucchinis are tender.

            Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired. Serve warm and enjoy your delicious BBQ Chicken Zucchini Boats!
