Ingredients

2 lbs chicken breast, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand)

1 cup crushed BBQ-flavored potato chips

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

2 large eggs

1 tbsp water

Salt and pepper to taste

Cooking spray or oil for the baking sheet

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray or a bit of oil.

Prepare the Marinade: In a bowl, combine the chicken pieces with the BBQ sauce, ensuring each piece is well-coated. Allow it to marinate while you prepare the breading mixture.

Set Up the Breading Station: In one shallow dish, add the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix to combine. In a second bowl, beat the eggs with 1 tablespoon of water until frothy. In a third bowl, place the crushed BBQ-flavored potato chips.

Bread the Chicken Pieces: Remove each marinated chicken piece from the BBQ sauce, allowing excess sauce to drip off, and then dip it into the flour mixture, making sure to coat thoroughly. Next, dip it into the egg mixture, and finally coat it with the crushed BBQ chips. Press gently to ensure the chips adhere well.

Arrange on Baking Sheet: Place the breaded chicken nuggets on the prepared baking sheet, ensuring they are spaced apart for even cooking.

Bake the Nuggets: Bake in the preheated oven for 20-25 minutes or until the nuggets are golden brown and cooked through, flipping them halfway through baking for even crispness.

Serve: Remove from the oven and allow to cool slightly before serving. Pair with extra BBQ sauce for dipping!
