Beef Lettuce Wraps with Blueberry Glaze

1 tablespoon vegetable oil

2 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 tablespoon soy sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 teaspoon ginger, grated

Salt and pepper to taste

1/4 cup scallions, chopped (for garnish)

For the Blueberry Glaze:

1 cup fresh blueberries (or frozen, thawed)

1/4 cup sugar

1/4 cup apple cider vinegar

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

Pinch of salt

1 tablespoon lemon juice

1 teaspoon fresh thyme (optional)

For Serving:

1 head of butter lettuce (or romaine lettuce, for wraps)

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Blueberry Glaze:

    - In a small saucepan, combine the blueberries, sugar, and apple cider vinegar. Bring to a gentle boil over medium heat, stirring occasionally, until the blueberries start to break down (about 5-7 minutes).

      - Add the cornstarch mixture and continue to cook, stirring until the glaze thickens (about 2 minutes). Remove from heat and stir in lemon juice, salt, and thyme. Set aside to cool.

        Cook the Beef Filling:

          - In a large skillet, heat the vegetable oil over medium-high heat. Add the garlic and onion, sautéing until fragrant and translucent (about 3 minutes).

            - Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s browned and no longer pink (about 5-7 minutes).

              - Stir in the diced red bell pepper, soy sauce, hoisin sauce, sesame oil, ginger, salt, and pepper. Cook for another 2-3 minutes until the vegetables are tender and the flavors meld.

                Assemble the Wraps:

                  - Carefully separate leaves from the butter lettuce head to create cups for wrapping. Rinse and pat dry.

                    - Spoon the beef filling evenly into each lettuce leaf, approximately 2-3 tablespoons per wrap.

                      Add the Glaze:

                        - Drizzle the cooled blueberry glaze generously over the beef filling in each lettuce wrap.

                          - Garnish with chopped scallions and fresh mint leaves if using.

                            Serve:
