Beef Tips with Buttery Noodles

1.5 lbs beef sirloin, cut into 1-inch cubes

2 tbsp olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup beef broth

1 cup red wine (optional, can substitute with more beef broth)

2 tbsp soy sauce

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

8 oz egg noodles

3 tbsp butter

1/4 cup heavy cream

Chopped fresh parsley for garnish

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet in batches (if necessary) and sear until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

      Deglaze: Stir in the red wine (or additional beef broth), scraping the bottom of the skillet to release any browned bits. Allow it to simmer for 2-3 minutes until slightly reduced.

        Simmer the Beef Tips: Return the browned beef to the skillet. Add the beef broth, soy sauce, Worcestershire sauce, dried thyme, and paprika. Bring it to a gentle simmer, cover, and cook on low heat for 30 minutes or until the beef is tender. Stir occasionally and season with additional salt and pepper, if needed.
