2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 cup cooked black beans (canned or fresh)

1 cup corn (canned, frozen, or fresh)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 cup salsa or pico de gallo

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and no longer pink, breaking it apart with a spatula (about 5-7 minutes).

    Add Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent and aromatic.

      Season the Beef: Sprinkle in the chili powder, cumin, salt, and pepper. Mix to combine, letting the spices cook for another 2 minutes.

        Incorporate Beans and Corn: Stir in the cooked black beans and corn to the beef mixture. Cook for an additional 3-4 minutes until everything is heated through. Remove from heat.

          Assemble the Burritos: Lay out a flour tortilla. On the lower third of the tortilla, add about 1/4 of the beef mixture, followed by a sprinkle of both cheddar and Monterey Jack cheese, and a spoonful of salsa.

            Roll It Up: Fold the sides of the tortilla in, then roll it up from the bottom to create a tight burrito. Repeat with the remaining tortillas and filling.

              Grill the Burritos: Preheat a skillet or griddle over medium heat. Lightly grease with cooking spray or butter. Place the burritos seam-side down on the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden and the cheese is melted inside.
