Ingredients

1 cup (2 sticks) unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon pure vanilla extract

2 large eggs

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butterscotch chips

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Sea salt flakes for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until fully incorporated.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Combine Wet and Dry Ingredients: Slowly add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix; a few flour streaks are okay.

Fold in Chips: Gently fold in the butterscotch chips, chocolate chips, and nuts (if using) until evenly distributed throughout the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Sprinkle with Sea Salt: If desired, sprinkle a few flakes of sea salt on top of each cookie before baking to enhance the flavor.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown, but the centers still look a little soft. They will continue to cook on the baking sheet once removed from the oven.

Cool and Enjoy: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy slightly warm for the ultimate melty experience!
