400g spaghetti (or pasta of your choice)

2 boneless, skinless chicken breasts, diced

150g pancetta or bacon, chopped

3 large eggs

1 cup grated Parmesan cheese (plus more for serving)

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon salt (or to taste)

1 teaspoon black pepper (freshly ground)

1/2 cup fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for a fresh zing)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Pancetta: In the same skillet, add the chopped pancetta (or bacon) and sauté until crispy, about 4-5 minutes. Add the minced garlic and cook for an additional minute, making sure not to burn the garlic.

        Combine Ingredients: Lower the heat and return the cooked chicken to the skillet. Add the drained spaghetti and toss everything together.

          Make the Sauce: In a medium mixing bowl, whisk together the eggs and Parmesan cheese until well combined. Slowly pour in 1/2 cup of reserved pasta water to temper the eggs (this prevents them from scrambling when added to the hot pasta). Mix well.

            Finish the Dish: Remove the skillet from heat and immediately pour the egg and cheese mixture over the pasta. Toss vigorously to coat the spaghetti in the sauce, adding more reserved pasta water as necessary to create a creamy consistency.
