8 oz spaghetti (or pasta of choice)

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1/2 cup chicken broth (or white wine)

1 lemon (juice and zest)

1/4 cup freshly grated Parmesan cheese

2 cups fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining. Set the pasta aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp and season with salt and pepper. Sauté for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Add Liquids: Pour in the chicken broth (or white wine) and scrape the bottom of the skillet to deglaze. Bring it to a simmer and let it cook for about 2-3 minutes.

          Combine Ingredients: Add the lemon juice and zest, stirring to combine. Then add the cooked shrimp back into the skillet along with the fresh spinach. Cook until the spinach wilts, about 2 minutes.

            Toss with Pasta: Add the drained spaghetti to the skillet. If the mixture seems dry, add a bit of the reserved pasta water to reach desired consistency. Toss everything together until evenly combined.

              Add Cheese & Garnish: Remove from heat, then stir in the grated Parmesan cheese. Taste and adjust seasoning with more salt and pepper if needed.

                Serve: Plate the garlic butter shrimp pasta and garnish with freshly chopped parsley. Enjoy immediately!
