1 cup grated zucchini (about 1 medium zucchini)

1 cup whole wheat flour

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup walnuts, chopped (optional)

1/2 cup raisins or chocolate chips (optional)

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp nutmeg

2 large eggs

1/3 cup vegetable oil

1 tsp vanilla extract

2 cups mixed greens (spinach, arugula, or your choice)

1/2 cucumber, sliced

1 medium tomato, diced

1/4 red onion, thinly sliced

1/4 cup feta cheese (optional)

Balsamic dressing or your favorite vinaigrette

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

      Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, granulated sugar, walnuts, raisins or chocolate chips (if using), baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

        Combine Wet Ingredients: In another bowl, beat the eggs. Add the vegetable oil and vanilla extract, stirring until well combined.

          Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently to combine. Fold in the grated zucchini until just incorporated.

            Bake the Bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Allow cooling in the pan for 10 minutes before transferring to a wire rack.

              Prepare the Salad Bowl: While the zucchini bread is cooling, prepare the salad. In a large mixing bowl, combine the mixed greens, cucumber slices, diced tomatoes, and red onion. Toss gently to combine.

                Assemble the Salad Bowl: Slice the cooled zucchini bread into thick pieces. On each serving plate, place a generous handful of the salad mix and top with two slices of zucchini bread. Sprinkle with feta cheese, if using.

                  Dress the Salad: Drizzle balsamic dressing or your favorite vinaigrette over the salad bowl just before serving.
