Biscoff Cheesecake Bars

For the crust:

1 ½ cups Biscoff cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1/4 teaspoon salt

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

½ cup Biscoff spread (plus extra for drizzling)

2 large eggs

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

A pinch of salt

For the topping:

¼ cup Biscoff spread, melted for drizzling

Crushed Biscoff cookies for garnish

Preheat Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, allowing it to hang over the sides for easy removal later.

    Prepare the Crust: In a mixing bowl, combine the Biscoff cookie crumbs, melted butter, granulated sugar, and salt. Stir until the mixture resembles wet sand.

      Press the Crust: Evenly press the crumb mixture into the bottom of the lined baking pan, creating a firm crust. Bake in the preheated oven for 10 minutes, then remove and let it cool slightly.

        Make the Cheesecake Filling: In a large bowl, beat together the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.

          Add Biscoff Spread and Eggs: Mix in the Biscoff spread until fully incorporated. Add the eggs one at a time, mixing gently after each addition until just combined.

            Incorporate Remaining Ingredients: Add in the vanilla extract, flour, and a pinch of salt. Mix until smooth. Be careful not to overmix.

              Pour Filling over Crust: Pour the cheesecake filling onto the cooled Biscoff crust and spread it evenly.

                Bake: Bake in the oven for 25-30 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and leave the cheesecake bars inside for another 20 minutes to cool gradually.

                  Cool and Refrigerate: Remove from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

                    Serve the Bars: Once set, carefully lift the cheesecake out of the baking pan using the parchment paper. Slice into bars. Drizzle melted Biscoff spread on top and sprinkle with crushed Biscoff cookies for an added crunch.
