2 cups cooked chicken breast, shredded or diced

6 slices of crispy bacon, chopped

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/2 cup cucumber, diced

1/2 cup shredded cheddar cheese (optional)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop them into bite-sized pieces.

    Prepare the Dressing: In a mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth. Adjust the seasoning to your taste.
