8 oz. elbow macaroni or rotini pasta

6 slices of crispy bacon, crumbled

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

½ cup cucumber, diced

¼ cup red onion, finely chopped

1 cup shredded cheddar cheese

½ cup ranch dressing (store-bought or homemade)

1 tbsp apple cider vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the romaine lettuce, dice the cucumber, halving the cherry tomatoes, and finely chop the red onion.

      Make the Dressing: In a large bowl, whisk together the ranch dressing and apple cider vinegar. Taste the dressing and add salt and pepper as needed.

        Combine Ingredients: In the bowl with the dressing, add the cooled pasta, crumbled bacon, cherry tomatoes, romaine lettuce, cucumber, red onion, and shredded cheddar cheese. Gently toss until the pasta and vegetables are evenly coated with the dressing.
