Blueberry Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz (450g) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tsp lemon juice

1 ½ cups fresh blueberries (can substitute with frozen, just thaw and drain)

1 tbsp all-purpose flour (for the blueberries)

For the topping:

½ cup sour cream

2 tbsp powdered sugar

½ tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Make the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake in the preheated oven for 8-10 minutes until slightly golden. Remove and let cool while you prepare the filling.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar, blending well. Add the eggs one at a time, mixing just until integrated. Then, mix in the vanilla extract and lemon juice.

        Prepare the Blueberries: In a separate bowl, toss the fresh blueberries with 1 tbsp of all-purpose flour (this helps prevent them from sinking). Gently fold the blueberries into the cream cheese mixture until evenly distributed.

          Pour and Bake: Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center jiggles slightly (it will firm up as it cools).

            Prepare the Topping: While the cheesecake is baking, mix together the sour cream, powdered sugar, and vanilla extract in a small bowl until smooth. Set it aside.

              Add the Topping: Once the cheesecake is done baking, remove it from the oven and immediately spread the sour cream topping over the top. Return to the oven for an additional 10 minutes.

                Cool & Chill: Allow the cheesecake to cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours (preferably overnight) to set completely.

                  Cut & Serve: Once chilled, lift the cheesecake out of the baking dish using the parchment overhang. Cut into bars and serve chilled. Optionally, garnish with extra blueberries or a drizzle of honey for added sweetness!
