2 cups fresh blueberries (or frozen, thawed)

2 cups cottage cheese (low-fat or full-fat)

3 large eggs

1/2 cup rolled oats

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon lemon zest (optional)

Optional toppings: Greek yogurt, additional blueberries, or chopped nuts for serving

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish (9x13 inches recommended) with cooking spray or butter.

    Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and lemon zest (if using). Whisk until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, baking powder, cinnamon, and salt.

        Fold Ingredients Together: Gradually add the dry mixture to the wet ingredients and stir until just combined. Be careful not to over-mix. Gently fold in the blueberries, reserving a few for topping.
