Blueberry Pie Bars

2 cups all-purpose flour

1 cup rolled oats

1 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, melted

1 teaspoon vanilla extract

2 cups fresh or frozen blueberries

1/2 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon lemon zest

1/4 teaspoon salt

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Crust and Topping: In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, then mix until crumbly. Reserve 1 cup of this mixture to use as the topping.

      Press the Crust: Firmly press the remaining crumb mixture into the bottom of the prepared baking dish to form a crust layer. Bake in the preheated oven for 12-15 minutes or until lightly golden. Remove from the oven and let cool for a few minutes.

        Prepare the Blueberry Filling: In a medium saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, lemon juice, lemon zest, and salt. Stir gently and cook for about 5-7 minutes, until the mixture starts to bubble and thicken. Remove from heat and let it cool for 5 minutes.

          Assemble the Bars: Pour the blueberry filling over the pre-baked crust, spreading it evenly. Sprinkle the reserved crumb topping over the filled layer.

            Bake the Bars: Return the dish to the oven and bake for an additional 25-30 minutes or until the topping is golden brown and the filling is bubbling.
