For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Blueberry Swirl:

1 cup fresh or frozen blueberries

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ cup heavy cream

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and allow to cool.

          Make the Blueberry Swirl:

            - In a small saucepan, combine blueberries, sugar, lemon juice, and cornstarch.

              - Cook over medium heat, stirring gently until the mixture thickens and the blueberries burst (about 5-7 minutes).

                - Remove from heat and let cool to room temperature.

                  Prepare the Cheesecake Filling:

                    - In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.

                      - Add the vanilla extract and mix until incorporated.

                        - Add eggs one at a time, beating on low speed just until blended.

                          - Mix in sour cream and heavy cream until the mixture is smooth and even.

                            Assemble the Cheesecake:

                              - Pour half of the cheesecake filling over the cooled crust.

                                - Spoon half of the blueberry mixture evenly over the filling, then use a knife or skewer to gently swirl it into the cheesecake.

                                  - Pour the remaining filling on top, and repeat the swirling process with the remaining blueberry mixture.

                                    Bake the Cheesecake:

                                      - Place the springform pan in a larger baking dish filled with water (to create a water bath). This helps prevent cracking.

                                        - Bake for 55-65 minutes, or until the center is set but slightly wobbly. Turn off the oven and crack the oven door, letting the cheesecake cool in the oven for about 1 hour.

                                          Chill and Serve:

                                            - Remove the cheesecake from the water bath and let it cool to room temperature.

                                              - Once cooled, refrigerate for at least 4 hours, preferably overnight.
