2 cups bok choy, chopped

1 cup mushrooms (shiitake or cremini), sliced

1 bell pepper (red or yellow), sliced

2 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Pinch of red pepper flakes (optional, for heat)

Sesame seeds and chopped green onions for garnish

Prep the Vegetables: Begin by thoroughly washing the bok choy to remove any dirt. Chop the bok choy into bite-sized pieces, making sure to separate the white stems from the leafy greens. Slice the mushrooms, bell pepper, and mince the garlic and ginger.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the white stems of bok choy and bell peppers. Stir-fry for about 2-3 minutes until they start to become tender.

      Add Garlic and Ginger: Stir in the minced garlic, grated ginger, and red pepper flakes. Continue to stir for an additional 30 seconds until fragrant.

        Incorporate Mushrooms: Add the sliced mushrooms to the skillet. Stir-fry for another 3-4 minutes until the mushrooms have softened and released their moisture.

          Add Bok Choy Greens: Add the leafy greens of the bok choy to the pan, along with the soy sauce and oyster sauce (if using). Stir and cook for another 2-3 minutes until the greens wilt down.

            Thicken the Sauce: Pour in the cornstarch mixture, stirring quickly to avoid clumping. Cook for an additional minute until the sauce thickens slightly and coats the vegetables.

              Finish with Sesame Oil: Remove the stir fry from heat and drizzle with sesame oil for added flavor. Toss to combine evenly.
