Bourbon Chocolate Cake with Blackberry Buttercream

For the Bourbon Chocolate Cake:

1¾ cups all-purpose flour

1¾ cups granulated sugar

¾ cup unsweetened cocoa powder

1½ tsp baking powder

1½ tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

½ cup bourbon

2 tsp vanilla extract

1 cup boiling water

For the Blackberry Buttercream:

1 cup unsalted butter, softened

3-4 cups powdered sugar

½ cup fresh blackberries (plus extra for garnish)

2-3 tbsp heavy cream (adjust for consistency)

1 tsp vanilla extract

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, bourbon, and vanilla extract until smooth.

        Combine Mixtures: Gradually add the wet mixture into the dry ingredients, mixing on medium speed until well incorporated.

          Add Boiling Water: Carefully stir in the boiling water (the batter will be thin). Mix until just combined.

            Fill Pans: Pour the batter evenly into the prepared cake pans.

              Bake: Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
