1 sheet of puff pastry (thawed)

4 large eggs

1 cup cooked breakfast sausage (crumbled)

1 cup shredded cheese (cheddar or mozzarella)

½ cup diced bell peppers (mixed colors)

¼ cup finely chopped green onions

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 egg (for egg wash)

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the sheet of puff pastry to smooth it out. Cut the pastry into rectangles, about 4 inches by 6 inches. Aim for 6-8 pieces depending on your pastry size.

      Prepare the Filling: In a large bowl, whisk together the eggs, cooked sausage, shredded cheese, diced bell peppers, green onions, garlic powder, onion powder, salt, and pepper until well combined.

        Assemble the Pastry Bars: Place a generous spoonful of the filling mixture onto the center of each puff pastry rectangle, leaving some space around the edges. Fold the pastry over to form a bar. Seal the edges by pressing them with a fork or crimping them with your fingers to prevent leakage.

          Apply Egg Wash: Beat the additional egg in a small bowl. Brush the tops of the pastry bars with the egg wash for a beautiful golden finish.

            Bake: Place the filled pastry bars onto the prepared baking sheet and pop them in the preheated oven. Bake for 15-20 minutes, or until golden brown and puffed.

              Cool and Serve: Remove from the oven and let them cool slightly before serving. Garnish with fresh herbs, if desired.
