Buffalo Chicken Stuffed Potatoes

4 large russet potatoes

1 cup cooked chicken, shredded (rotisserie chicken works great!)

1/2 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

1/4 cup ranch dressing

2 tablespoons green onions, chopped (for garnish)

Salt and pepper to taste

Olive oil for drizzling

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Scrub the russet potatoes under cold water to remove any dirt. Pat them dry and poke several holes in each potato with a fork. Drizzle with olive oil and sprinkle with salt.

      Bake Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces through.

        Mix Chicken Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese. Stir until everything is well-coated and creamy. Season with salt and pepper to taste.

          Stuff Potatoes: Once the potatoes are cooked, remove them from the oven and carefully cut them in half lengthwise. Using a fork or spoon, gently scoop out some of the potato flesh, leaving a border for stability. Mix the scooped potato flesh into the chicken mixture for added flavor, if desired.

            Fill Potatoes: Generously spoon the buffalo chicken mixture back into the emptied potato halves. Top with the remaining cheddar cheese and crumbled blue cheese if using.

              Bake Again: Return the stuffed potatoes to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and drizzle with ranch dressing. Garnish with chopped green onions before serving.
