1/2 cup brown sugar, packed

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon ground cinnamon

For the crisp topping:

1 cup rolled oats

1/2 cup all-purpose flour

3/4 cup brown sugar, packed

1/2 cup cold unsalted butter, cut into small pieces

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Prepare the peach filling: In a large bowl, combine the sliced peaches with brown sugar, lemon juice, vanilla extract, cornstarch, ground cinnamon, and a pinch of salt. Toss everything together until the peaches are evenly coated. Transfer the mixture to a greased 9x13 inch baking dish.
