Buttery Pumpkin Muffins

Ingredients
  

1 cup pumpkin puree (canned or fresh)

1/2 cup unsalted butter, melted and slightly cooled

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional, for a sweet twist)

Instructions
 

Preheat your oven to 350°F (175°C). Line a standard muffin tin with paper liners or grease the cups with cooking spray.

    In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix well until smooth and creamy.

      Add the pumpkin puree, eggs, and vanilla extract to the butter-sugar mixture. Whisk together until all ingredients are well combined and the mixture is smooth.

        In another bowl, combine the flour, baking powder, baking soda, pumpkin pie spice, and salt. Whisk them together to ensure they are evenly mixed.

          Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon, mixing until just combined. Avoid overmixing; it's okay if the batter is a bit lumpy.

            If you choose to add nuts or chocolate chips, gently fold them into the batter at this stage.

              Evenly distribute the batter into the prepared muffin cups, filling each about two-thirds full.

                Bake in the preheated oven for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                  Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then transfer the muffins to a wire rack to cool completely.

                    Serve warm or at room temperature, and enjoy the rich buttery pumpkin goodness!
