Instructions

Make the Gnocchi Dough:

    - In a large mixing bowl, combine the pumpkin puree, egg, salt, and nutmeg. Mix well until the ingredients are fully integrated.

      - Gradually add in 1 cup of flour and mix gently to combine. Continue adding flour, a little at a time, until a soft but slightly sticky dough forms.

        - Turn the dough out onto a floured surface. Knead gently for about 2-3 minutes, adding flour as needed to prevent sticking, until smooth.

          Shape the Gnocchi:

            - Divide the dough into 4 equal portions. Roll each piece into a long rope, about ½ inch in diameter. Use a sharp knife to cut the rope into 1-inch pieces.

              - To create the classic gnocchi shape, use a fork to gently press down on each piece, creating ridges. Place them on a flour-dusted tray.

                Cook the Gnocchi:

                  - Bring a large pot of salted water to a boil. Carefully drop in the gnocchi in batches. They are done when they float to the surface, usually taking about 2-3 minutes.

                    - Using a slotted spoon, remove the gnocchi from the pot and transfer them to a serving dish.

                      Prepare the Sage Butter Sauce:

                        - In a large skillet, melt the butter over medium heat. Add the sage leaves and sauté for 2-3 minutes until the butter is slightly browned and the sage is crispy. Be careful not to burn the butter.

                          - Season with salt and pepper to taste, and if desired, add a squeeze of lemon juice for brightness.

                            Combine and Serve:

                              - Gently toss the cooked gnocchi in the sage butter sauce until well coated.

                                - Serve immediately, garnished with grated Parmesan cheese and additional crispy sage leaves if desired.
