Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

Salt and black pepper, to taste

8 oz fettuccine pasta

1 tablespoon butter

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for heat preference)

Fresh parsley, chopped (for garnish)

Grated additional Parmesan cheese (for serving)

Instructions

Marinate the Chicken: Start by seasoning the chicken breasts with Cajun seasoning, salt, and black pepper. Let them marinate for at least 15 minutes to absorb the flavors.

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water for later use.

Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side, or until the chicken is golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing it into strips.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring constantly until it begins to simmer.

Add Cheese and Spices: Gradually whisk in the grated Parmesan cheese, smoked paprika, and cayenne pepper. Continue to stir until the sauce is smooth and has thickened slightly. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Combine Everything: Add the cooked fettuccine to the Alfredo sauce and toss to combine, ensuring the pasta is well coated. Add the sliced chicken on top and gently mix.

Serve: Garnish with freshly chopped parsley and an extra sprinkle of grated Parmesan cheese. Serve immediately, with extra Cajun seasoning on the side for those who like an extra kick!
