Ingredients

4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup mayonnaise

1/4 cup apple cider vinegar

2 tablespoons Dijon mustard

1 tablespoon lemon juice

1 tablespoon Worcestershire sauce

1 teaspoon hot sauce (optional, adjust to taste)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a small bowl, mix together the Cajun seasoning, garlic powder, paprika, onion powder, black pepper, and salt. Rub the olive oil over the chicken breasts, then coat them evenly with the seasoning mix. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Alabama White Sauce: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, lemon juice, Worcestershire sauce, and hot sauce (if using). Adjust the hot sauce to your spice preference. Set aside in the fridge to chill while you grill the chicken.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). You can also use a grill pan on the stovetop if preferred.

Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on one side, then flip and grill for an additional 6-7 minutes on the other side, or until the internal temperature reaches 165°F (75°C). Avoid pressing down on the chicken to keep it juicy.

Rest and Serve: Once grilled, remove the chicken from the grill and allow it to rest for 5 minutes. Slice the chicken and serve it drizzled with the chilled Alabama white sauce. Garnish with freshly chopped parsley.

Enjoy With: Serve the Cajun grilled chicken with your favorite sides, such as coleslaw, cornbread, or grilled vegetables for a full meal.
