1 tablespoon Cajun seasoning

1 cup jasmine rice

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 red bell pepper, diced

1 cup corn (fresh or frozen)

1 cup black beans, rinsed and drained

1 avocado, sliced

1 lime, juiced

1/4 cup chopped fresh cilantro

Salt and pepper to taste

Optional toppings: sour cream, sliced jalapeños, additional lime wedges

Prepare the Rice: In a medium saucepan, combine the jasmine rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

    Season the Salmon: While the rice is cooking, pat the salmon fillets dry with paper towels. Rub each fillet with olive oil and season generously with Cajun seasoning, salt, and pepper.
