1 lb (450g) boneless, skinless chicken breast, diced

8 oz (225g) penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved or quartered

1/4 cup fresh basil leaves, torn

1/2 cup chicken broth (low-sodium)

1 tablespoon balsamic glaze (optional)

Grated Parmesan cheese for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, and season with Italian seasoning, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center.

      Add Garlic and Tomatoes: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Toss in the halved cherry tomatoes and cook until they are soft and starting to burst, about 3-4 minutes.

        Combine Ingredients: Add the cooked penne pasta to the skillet along with the chicken broth. Stir everything together, allowing the broth to coat the pasta and heat through.

          Mix in Mozzarella and Basil: Remove the skillet from heat. Stir in the fresh mozzarella and torn basil leaves until the cheese starts to melt slightly. Taste and adjust seasoning with more salt and pepper if necessary.

            Serve: Drizzle with balsamic glaze if desired, and sprinkle with grated Parmesan cheese. Serve immediately and enjoy!
