1 pound chicken breast, cut into 1-inch cubes

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella balls (bocconcini), drained

1/4 cup fresh basil leaves

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Skewers (wooden or metal)

Marinate the Chicken: In a bowl, combine the chicken cubes, olive oil, minced garlic, salt, and pepper. Toss to coat evenly. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Balsamic Glaze: In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Let it reduce by half, stirring occasionally, for about 10 minutes until it thickens and coats the back of a spoon. Remove from heat and set aside to cool.

      Assemble the Skewers: Thread the marinated chicken, halved cherry tomatoes, mozzarella balls, and fresh basil leaves onto the skewer alternately. Aim for 2-3 pieces of chicken per skewer for an ideal ratio with the vegetables.

        Cook the Skewers: Preheat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

          Serve: Once cooked, transfer the skewers to a platter. Drizzle the cooled balsamic glaze over the top and garnish with additional fresh basil if desired. Serve immediately while warm.
