1 pint cherry tomatoes, halved

8 oz fresh mozzarella balls (ciliegine)

Fresh basil leaves

1/2 cup balsamic vinegar

1 tsp honey (optional)

Extra virgin olive oil

Salt and pepper to taste

Skewers (8-inch or 12-inch)

Instructions
 

Prepare the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey (if using). Bring to a gentle boil over medium heat, then reduce the heat to low and simmer for about 10-15 minutes, or until thickened and reduced to about 1/4 cup. Stir occasionally to prevent burning. Once ready, remove from heat and let it cool.

    Assemble the Skewers: Take a skewer and thread a half cherry tomato, followed by a basil leaf, and then a mozzarella ball. Repeat the pattern to fill the skewer, leaving a little space at each end. You can aim for about 3-4 sets of tomato, basil, and mozzarella per skewer.

      Drizzle with Olive Oil: Once all the skewers are assembled, place them on a serving platter. Drizzle with extra virgin olive oil and sprinkle with salt and pepper to enhance the flavors.

        Finish with Balsamic Glaze: After drizzling with olive oil, use a spoon or squeeze bottle to drizzle the cooled balsamic glaze over the skewers.
