For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter (melted)

For the cheesecake filling:

24 oz (3 packages) cream cheese (softened)

1 cup granulated sugar

1 cup sour cream

4 large eggs

2 tsp vanilla extract

1 tsp ground cinnamon

½ tsp ground nutmeg

For the apple topping:

3 medium Granny Smith apples (peeled, cored, and sliced)

¼ cup unsalted butter

½ cup brown sugar

1 tsp ground cinnamon

¼ tsp salt

½ cup caramel sauce (store-bought or homemade)

For garnish:

Additional caramel sauce

Whipped cream (optional)

Chopped pecans or walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust:

      In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are moistened. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake in the preheated oven for 10 minutes, then remove and let cool while you prepare the filling.

        Make the Cheesecake Filling:

          In a large mixing bowl, beat the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy. Add the sour cream, eggs, vanilla extract, cinnamon, and nutmeg. Mix until thoroughly combined and smooth.

            Bake the Cheesecake:

              Pour the cheesecake filling over the cooled crust in the springform pan. Tap gently on the counter to remove air bubbles. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the door, and allow the cheesecake to slow-cool in the oven for 1 hour to prevent cracks.

                Prepare the Apple Topping:

                  While the cheesecake is cooling, melt butter in a large skillet over medium heat. Add the sliced apples, brown sugar, cinnamon, and salt. Sauté the apples for about 10-15 minutes, until they are tender and fragrant, stirring occasionally. Remove from heat and let cool slightly.

                    Assemble the Cheesecake:

                      Once the cheesecake is completely cooled, spread the sautéed apple mixture evenly on top. Drizzle the caramel sauce generously over the apples.

                        Chill and Serve:

                          Cover the cheesecake and refrigerate for at least 4 hours, or overnight for best results. Before serving, drizzle with additional caramel sauce and garnish with whipped cream and chopped nuts if desired.
