Ingredients

1 lb (450g) boneless, skinless chicken thighs, diced

1 cup diced salami

1 cup diced pepperoni

1 cup fresh mozzarella balls, halved

1 cup cherry tomatoes, halved

½ cup pitted kalamata olives, halved

½ cup walnuts, toasted and roughly chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil leaves for garnish

Baguette slices or crackers for serving

Instructions

Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the diced chicken thighs with garlic powder, Italian seasoning, salt, and black pepper. Add them to the skillet and sauté until they are golden brown and cooked through, about 7-8 minutes.

Add the Meats: Incorporate the diced salami and pepperoni into the skillet. Stir to combine and cook for another 3-4 minutes until the meats have heated through and released their flavorful oils.

Mix in the Veggies: Add the cherry tomatoes and kalamata olives to the skillet, stirring gently. Allow the mixture to cook for an additional 2-3 minutes until the tomatoes start to soften.

Cheesy Goodness: With the heat on low, gently fold in the halved mozzarella balls and cook just until they start to melt slightly, about 1-2 minutes. If using red pepper flakes, sprinkle them in at this stage for a bit of heat.

Finish with Nuts: Remove the skillet from heat, and fold in the toasted walnuts for a delightful crunch.

Serve and Garnish: Transfer the chicken mixture to a serving platter or keep it in the skillet for a rustic presentation. Garnish with fresh basil leaves. Serve alongside slices of baguette or crackers for dipping and scooping.
