2 cups cooked jasmine rice (preferably day-old)

1 cup mixed charcuterie meats (salami, prosciutto, and chorizo), diced

1/2 cup sharp cheddar cheese, shredded

1/2 cup green onions, chopped (both white and green parts)

1/2 cup roasted red bell peppers, diced

1/4 cup black olives, pitted and sliced

3 large eggs, beaten

3 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon onion powder

Freshly cracked black pepper, to taste

Optional garnish: fresh parsley or basil, chopped

Prepare the Ingredients: Ensure all ingredients are diced and ready to go. Using day-old rice helps in getting that perfect texture, so if you don’t have any, cook jasmine rice and let it cool.

    Heat the Oils: In a large skillet or wok, heat the olive oil and sesame oil over medium-high heat.

      Cook the Eggs: Pour the beaten eggs into the skillet and scramble until fully cooked. Transfer the eggs to a plate and set aside.

        Sauté the Meats: In the same skillet, add the diced charcuterie meats. Sauté for about 2-3 minutes until they are slightly crispy and fragrant.

          Add Vegetables: Add the chopped green onions (white parts only), roasted red bell peppers, and black olives to the skillet. Stir-fry for another 2 minutes until the veggies are slightly softened.

            Incorporate the Rice: Add the cooked jasmine rice to the skillet, breaking up any clumps. Pour in the soy sauce, garlic powder, onion powder, and season with black pepper. Stir-fry everything together for 5-7 minutes, ensuring the rice is heated through and coated evenly with the ingredients.

              Fold in the Cheddar and Eggs: Add the shredded cheddar cheese and scrambled eggs back into the skillet. Toss everything together until the cheese starts to melt and the dish is well mixed.

                Serve and Garnish: Remove from heat, garnish with fresh parsley or basil if desired, and serve hot.
