2 cups cooked elbow macaroni

1 cup diced cooked chicken (or rotisserie chicken)

1 cup broccoli florets (fresh or frozen)

1 can (10.5 oz) cream of chicken soup

1 cup milk

1 ½ cups shredded cheddar cheese

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup breadcrumbs (optional for topping)

2 tablespoons olive oil (if using breadcrumbs)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Prepare the Casserole Base: In a large mixing bowl, combine the cooked macaroni, diced chicken, broccoli florets, cream of chicken soup, milk, 1 cup of shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Casserole: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly with a spatula.

Prepare the Topping: If using, mix the breadcrumbs with olive oil in a small bowl to coat. Sprinkle the breadcrumb mixture over the top of the casserole for added crunch.

Add More Cheese: Top the casserole with the remaining ½ cup of shredded cheddar cheese.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.

Serve: Remove from the oven and let it cool for a few minutes before serving. Enjoy your comforting and cheesy back-to-school casserole!
