4 large russet potatoes, peeled and thinly sliced

1 cup cooked bacon, chopped (about 8 slices)

2 cups shredded sharp cheddar cheese

1 cup sour cream

1 cup heavy cream

1 small onion, finely diced

3 cloves garlic, minced

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

1 tablespoon fresh chives, chopped (for garnish)

Optional: ½ cup grated Parmesan cheese (for an extra cheesy topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large bowl, combine the thinly sliced potatoes, diced onion, garlic, salt, pepper, and paprika. Toss gently to ensure that the potatoes are evenly coated with the seasonings.

      Layer the Casserole: In a greased 9x13 inch baking dish, arrange half of the potato mixture at the bottom. Sprinkle half of the chopped bacon and half of the cheddar cheese over the potatoes.

        Add Cream Mixture: In a separate bowl, whisk together the sour cream and heavy cream until well blended. Pour half of this mixture over the first layer in the baking dish.

          Repeat Layers: Add the remaining potatoes on top, followed by the remaining bacon and cheese. Pour the rest of the cream mixture evenly over the top. If using, sprinkle the grated Parmesan cheese for an extra layer of flavor.

            Cover and Bake: Cover the casserole with aluminum foil (to prevent over-browning) and bake in the preheated oven for 45 minutes.

              Uncover and Brown: After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is bubbling and the top is golden brown.

                Garnish and Serve: Once done, remove the casserole from the oven and let it cool for about 10 minutes. Garnish with fresh chives before serving.
