Cheesy Broccoli and Rice Casserole

2 cups of fresh broccoli florets (steamed until tender)

1 cup of uncooked white rice (or brown rice for a healthier option)

3 cups of vegetable broth (or chicken broth)

1 medium onion, finely chopped

2 cloves of garlic, minced

2 cups of shredded sharp cheddar cheese

1 cup of cream of mushroom soup (or homemade equivalent)

1 tablespoon of olive oil

1 teaspoon of salt

1/2 teaspoon of black pepper

1/2 teaspoon of paprika

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

3/4 cup of breadcrumbs (panko preferred for extra crunch)

2 tablespoons of melted butter (to mix with breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the uncooked rice, cover, and reduce to a simmer. Cook until the rice is tender and all the liquid is absorbed, about 18-20 minutes.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, steamed broccoli, cream of mushroom soup, 1.5 cups of cheddar cheese, salt, black pepper, paprika, garlic powder, and onion powder. Mix until all ingredients are well-combined.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Prepare the Topping: In a small bowl, mix the remaining 0.5 cup of cheddar cheese with breadcrumbs and melted butter, ensuring the breadcrumbs are coated.

              Top and Bake: Sprinkle the cheesy breadcrumb mixture evenly over the casserole. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes, or until the top is golden and bubbling.
