1 medium head of cauliflower, riced (about 4 cups)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup marinara sauce (for dipping)

Fresh basil leaves (for garnish, optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

    Prepare the Cauliflower: Wash and cut the cauliflower into florets. Using a food processor, pulse the cauliflower until it resembles rice. If you don't have a food processor, you can grate it using a box grater.

      Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl. Cover with plastic wrap and microwave for about 4-5 minutes until it’s soft. Allow it to cool slightly before handling.

        Drain Excess Moisture: Once cooled, place the cooked cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to ensure your breadsticks are not soggy.

          Mix the Ingredients: In a large bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, beaten eggs, garlic powder, oregano, salt, black pepper, and red pepper flakes (if using). Mix well until a dough-like consistency forms.

            Shape the Dough: Transfer the mixture to the lined baking sheet. Use your hands to spread the mixture into a rectangle approximately 1/2 inch thick. Use a spatula to smooth the top.

              Bake the Base: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the edges are golden brown and the center is set.
