Cheesy Chicken Broccoli Rice Casserole

2 cups cooked rice (white or brown)

2 cups broccoli florets (fresh or frozen)

2 cups cooked chicken, shredded or diced

1 cup cheddar cheese, shredded

1 cup cream of chicken soup (or a homemade equivalent)

½ cup sour cream

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper, to taste

½ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or melted butter (for breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Ingredients: If using fresh broccoli, blanch it in boiling water for 2-3 minutes until bright green, then drain and set aside. If using frozen broccoli, thaw and drain any excess water.

      Mix the Base: In a large mixing bowl, combine the cooked rice, cooked chicken, broccoli florets, cream of chicken soup, sour cream, and milk. Add garlic powder, onion powder, paprika, salt, and pepper. Stir until everything is well coated.

        Add Cheese: Gently fold in ¾ cup of shredded cheddar cheese into the mixture.

          Transfer to Baking Dish: Grease a 9x13 inch baking dish with cooking spray or olive oil. Pour the chicken, broccoli, and rice mixture into the dish, spreading it out evenly.

            Top with Cheese: Sprinkle the remaining ¼ cup of cheddar cheese over the top of the casserole.
