2 boneless, skinless chicken breasts, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup bell peppers (mixed colors), diced

1 small red onion, diced

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp cumin

Salt and pepper to taste

4 large flour tortillas

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or salsa (for serving, optional)

Instructions
 

Prepare the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, cumin, salt, and pepper. Cook for about 7-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

    Add Vegetables: Once the chicken is cooked, add the diced bell peppers and red onion to the skillet. Sauté for an additional 3-4 minutes, until the vegetables are slightly softened.

      Cheese It Up: Reduce the heat to low and sprinkle both the cheddar and mozzarella cheese over the chicken and vegetable mixture. Stir gently until the cheese melts and creates a gooey, cheesy mixture. Remove from heat.

        Assemble the Wraps: Lay one tortilla flat on a clean surface. Spoon a generous amount of the cheesy chicken filling onto the center of the tortilla. Fold in the sides, then roll the tortilla tightly from the bottom to the top, securing the filling inside. Repeat with the remaining tortillas.

          Toast the Wraps (Optional): For extra flavor, place the filled wraps seam-side down in the skillet over medium heat for 2-3 minutes on each side until golden brown and crispy.
