4 medium-sized russet potatoes

1 cup cooked chili (homemade or canned)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions (scallions)

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

Olive oil for drizzling

Fresh cilantro for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes under cold water and dry them. Pierce each potato several times with a fork. This allows steam to escape during baking.

      Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the skins are crispy and a fork easily pierces through the flesh.

        Cool and Scoop: Once the potatoes are done, remove them from the oven and let them cool for about 10 minutes. Carefully slice each potato in half lengthwise. Use a spoon to scoop out the flesh, leaving about 1/4 inch of potato around the skins for sturdiness.

          Mix the Filling: In a mixing bowl, combine the scooped potato flesh with cooked chili, half of the shredded cheddar cheese, sour cream, garlic powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.

            Stuff the Potato Skins: Generously fill each potato skin with the chili and cheese mixture.

              Top with Cheese: After stuffing, sprinkle the remaining shredded cheddar cheese on top of each filled potato skin.

                Bake Again: Place the stuffed potato bites back on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                  Garnish and Serve: Remove the potato bites from the oven. Drizzle with olive oil and sprinkle with chopped green onions and cilantro, if desired. Serve hot with additional sour cream on the side.
