Cheesy Crockpot Chili Mac with Corn

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chiles

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

2 cups elbow macaroni

4 cups beef broth (or vegetable broth)

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

salt and pepper to taste

2 cups shredded cheddar cheese (plus extra for topping)

1/2 cup sour cream (optional for serving)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef until thoroughly cooked. Drain any excess grease. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent, about 3-4 minutes.

    Combine Ingredients in Crockpot: Transfer the meat mixture to the crockpot. Add the diced tomatoes, kidney beans, black beans, corn, elbow macaroni, beef broth, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.

      Cook in the Crockpot: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The pasta should be tender and the flavors well blended.

        Stir in Cheese: About 30 minutes before serving, stir in 2 cups of shredded cheddar cheese until melted and creamy. Check the consistency and adjust with a little more broth if necessary.

          Serve it Up: Once done, serve hot in bowls topped with additional cheese, a dollop of sour cream if desired, and garnish with fresh cilantro or green onions.
