2 lbs baby potatoes, halved

1 large onion, thinly sliced

2 cups beef broth

1 cup French onion dip

2 cups shredded Gruyère cheese (or Swiss cheese)

1 cup shredded mozzarella cheese

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Onions: In a skillet, melt the butter with olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking them slowly until they become caramelized and golden brown, stirring occasionally (about 15-20 minutes).
