Cheesy Garlic Hasselback Potatoes

4 medium-sized russet potatoes

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1 cup cheddar cheese, shredded

1/2 cup parmesan cheese, grated

1/4 cup fresh chives, chopped

2 tablespoons olive oil

Salt and pepper to taste

Optional: sour cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash and scrub the potatoes thoroughly. Pat them dry. Using a sharp knife, make deep cuts across the potatoes without slicing all the way through (about 1/8 inch apart) to create hasselback slices.

      Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, olive oil, salt, and pepper. Stir well to combine.

        Season the Potatoes: Place the potatoes on a baking sheet lined with parchment paper. Brush the garlic butter mixture generously over each potato, ensuring it gets in between the slices.

          Bake the Potatoes: Roast the potatoes in the preheated oven for about 45-50 minutes, until they are tender and crispy, basting them with the remaining butter mixture halfway through.

            Add the Cheese: In the last 10 minutes of baking, remove the potatoes from the oven and sprinkle the shredded cheddar and grated parmesan cheese evenly over the top. Return to the oven and bake until the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove the potatoes from the oven. Sprinkle with freshly chopped chives and serve while hot. Optionally, add a dollop of sour cream on top for extra creaminess.
