8 ounces penne pasta

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (15 ounces) diced tomatoes with green chilies

1 can (15 ounces) black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 tablespoon taco seasoning

1 teaspoon cumin

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup tortilla chips, crushed (for topping)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Cook the Pasta: In a large pot, boil water and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes.

        Mix the Ingredients: Stir in the diced tomatoes with chilies, black beans, corn, taco seasoning, cumin, salt, and pepper. Let it simmer for about 5 minutes to allow flavors to meld.

          Combine with Pasta: In a large mixing bowl, combine the cooked penne pasta with the beef mixture. Add 1 cup of cheddar cheese and ½ cup of Monterey Jack cheese, mixing until well incorporated.

            Prepare for Baking: Preheat the oven to 350°F (175°C). Transfer the pasta-beef mixture to a greased 9x13 inch baking dish. Sprinkle the remaining cheddar and Monterey Jack cheese evenly on top, followed by the crushed tortilla chips.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro and serve warm with a dollop of sour cream on the side.
