1 cup fresh or frozen sweet corn, thawed

1 cup diced Hatch green chiles (fresh or canned)

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1/4 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

12 small tortilla cups (store-bought or homemade)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the oven to 350°F (175°C).

    In a mixing bowl, combine the softened cream cheese and mayonnaise until smooth. Stir in the sweet corn, diced Hatch green chiles, and both cheeses (Monterey Jack and cheddar).

      Season the mixture by adding the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well combined.

        Spoon the cheesy corn mixture into each tortilla cup, filling them generously. Place the filled cups on a baking sheet.

          Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and the tops are slightly golden.

            Carefully remove from the oven and allow the dip cups to cool for a minute.
